I made these to travel with a steak dinner last weekend and that we gobbled them up! We had a few of leftover biscuits. I warmed them up and ate them with some scrambled eggs for breakfast. Perfect!

How to Make Keto Biscuits with Almond Flour
These Crack Keto Biscuits are super easy to form . Start with melting some cheese and mozzarella cheese. I just popped it within the microwave for a few minute. Next stir in some leaven , eggs, almond flour, ranch dressing mix, cheddar , and bacon. Form the dough into balls and let rest 10 minutes before baking. So easy!
I used a 10-inch skillet and an outsized cookie scoop and got 11 biscuits. If you do not want individual biscuits, i feel you'll just put the dough within the skillet or baking pan and make a loaf of bread. i prefer to brush the cooked biscuits with some melted butter and dried parsley.
The key to creating these Crack Keto Biscuits is using superfine almond flour. Almond flour is pretty common in stores. I bought mine at Publix and Walmart. I used Arthur Flour brand. I also like Bob's Red Mill Almond Flour.
INGREDIENTS:
- 4-oz cream cheese
- 2 cups shredded mozzarella cheese
- 2 tsp baking powder
- 3 eggs
- 1 (1-oz) packet dry Ranch dressing mix
- 1-1/2 cups superfine almond flour
- 1 cup shredded cheddar cheese
- 1/2 cup chopped cooked bacon
INSTRUCTIONS:
- Preheat oven to 400ºF.
- In a microwave-safe bowl, microwave cream cheese, and mozzarella cheese on HIGH for 1 minute. Stir until smooth.
- Add baking powder, eggs, ranch mix, and almond flour to cream cheese mixture. Stir well.
- Stir in cheddar cheese and bacon. Stir until combined.
- Spray a 10-inch iron skillet with cooking spray. Divide the dough into 11 or 12 balls and place in skillet. Place skillet in the refrigerator for 10 minutes.
- Remove skillet from the refrigerator and bake for 20 to 25 minutes. Brush cooked biscuits with melted butter and sprinkle with dried parsley, if desired.
