CUCUMBER BRUSCHETTA

  • 2 teaspoons red wine vinegar
  • salt and pepper to taste

FOR SERVING

  • 1 baguette
  • olive oil
  • 1 clove garlic

INSTRUCTIONS:

  1. add all topping substances in a bowl and lightly toss to mix.
  2. Slice baguette into three/four" slices and brush the pinnacle of each slice with olive oil.
  3. Broil 2-three minutes or till gently toasted. dispose of from the oven and rub each slice of bread with the fresh clove of garlic.
  4. Spoon the cucumber mixture over the bread to serve.
