PANDAN SPONGE CAKE

The ingredients needed to make pandan sponge are very easy to get both in traditional markets and supermarkets. For the use of the oven, you can use an electric oven or an ordinary oven heated with a gas stove. If using a regular oven that is not equipped with a temperature indicator, to get a temperature of 180oC as in the recipe, preheat the oven on the stove for 10 to 15 minutes on medium heat.

To get a perfect and soft texture pandan sponge, make sure you use room temperature eggs (do not just remove it from the refrigerator), beat the eggs until they are completely inflated and then mixed with other dry ingredients. In addition, do not forget to heat the oven first before the mixture is ready for baking. Do not leave the dough that is ready for baking too long at room temperature. This will result in the dough dropping and slapping when cooked.

INGREDIENTS:
  • 6 chicken eggs
  • 150 g of refined sugar
  • 100 g of butter, melt
  • 1 teaspoon of pandan paste
  • 1 tablespoon of suji leaf water
  • 150 grams of flour
  • ½ teaspoon of baking powder
INSTRUCTIONS:
  1. Beat the eggs and sugar until they expand, put the sifted flour together with baking powder slowly, alternating with the melted butter.
  2. Add pandan paste and suji leaf water, stirring thoroughly.
  3. Prepare a round baking dish that has been smeared with butter and sprinkled with a little flour. Pour the sponge mixture into a baking dish.
  4. Bake in an oven at 180ÂșC for 30 minutes.
  5. Remove it from the baking dish, cut it into pieces and serve it.
Cutting sponge cake is sometimes as tricky as making a sponge fluffy perfectly. If the cutting technique is wrong, maybe the sponge you have made with difficulty will fall apart. Use a special long jagged knife to cut the sponge if you have one, or an ordinary long knife that has been soaked in warm water and then wiped with a clean napkin. You can also use a sewing thread, first mark the points on the sponge that will be cut, then stretch the yarn above it, then press and move the thread back and forth slowly. Keep your hands in a parallel position so that the results of the sponge pieces remain neat.
